Beekeepers' Fruit Cake

100 g English honey 75 g caster sugar
100 g margarine 2 eggs (beaten)
150 g plain flour pinch salt
1 level tsp baking powder 2 level tsp mixed spice
400g mixed fruit half tsp lemon juice
Cream fat, honey and sugar. Beat in the eggs. Sieve the dry ingredients and fold into the mixture with the fruit and the lemon juice. Add milk to give a soft consistency. Put into a 7” greased and lined tin and bake in a moderate oven for 2 hours.
