Honey Cake

The new cake for the Southport Flower Show (from 2006)

180g Local Honey

150 g Butter

200g Self Raising Flour

120g soft brown sugar

1 tablespoon water

2 beaten eggs

Melt butter, sugar, honey and water over a low heat. Cool to hand-hot. Stir in the beaten eggs, then add the flour. Bake in a round tin not to exceed 17.5cm in diameter in a medium over for approximately 60 mins.
