PAIN D’EPICES
350g good local honey
½ glass milk
150g sugar
2 eggs, beaten
350g plain flour
1 tsp baking powder
1 grated orange zest
1 tsp ground aniseed (*)
Mix together the milk and honey, add the sugar and
eggs, mix well. Add the flour, raising powder, aniseed
powder and orange zest.
If the mixture looks a bit too thick, add more milk.
Place in a buttered baking dish and leave for ¼ hour,
during which time you can pre-heat the oven to 140°.
Bake for approx 45 minutes

(*) you can buy this on the market in France. If you
don’t have any aniseed powder, you can use a bit of
Pernod instead – that’s what my mum told me!
